A sweet yoghurt dessert is an Indian dish made of natural yoghurt. Very refreshing on a hot day after a spicy main meal.
Serves:6
Preparation Time: 3 days, 4 hours
8 cups yoghurt
3/4 cup sugar
3 pinches whole nutmeg, ground
1 teaspoon cardamon seeds, ground
1 teaspoon almonds, sliced
Strain yoghurt by laying an entire newspaper down, then a folded towel, layer a tea towel on top, then as the final layer, a muslin cloth.
Pour homemade yoghurt onto one side of the muslin, fold over the other side of muslin, tea towel and towel.
Leave for 1 hour for water to reduce or longer for a thicker desired consistency. In a bowl, add strained yoghurt and sugar.
Leave for 1 hour for sugar to dissolve. Blend with hand blender.
Add cardamon and nutmeg. Serve with sliced almonds. Keep refrigerated for up to a week.
