Flatto Peach, Tomato & Feta Salad | Recipe

Flatto™ are perfect for work or school lunch boxes due to their unique flat shape, Flatto™ originate from ancient China. Unlike a traditional peach the skin has little or no-fuzz. Grown in Sunny, dry Central Otago. Flatto™ are known for their very sweet flavour. Savour them fresh while firm and crunchy, or let then ripen for a softer, juicier experience. While they are best enjoyed fresh as a healthy snack anytime, there are many summer culinary ideas; make a peach salsa to enjoy with BBQ meats, add to salads, make a chia pudding and top with slices or add to smoothies.  Even a slice in a cold glass of prosecco or sparkling water.

Ingredients

  • 75g bulgar wheat, pearl couscous, orzo or quinoa
  • 250g cherry tomatoes
  • 400g Flatto Peaches 
  • 1 chilli
  • 1 garlic
  • A pinch or two of dried oregano
  • A handful of basil, leaves only
  • 120g feta
  • 1 lemon
  • 1 tbsp olive oil
  • Sea salt
  • Freshly ground pepper

Method

Cook your chosen grain following packet instructions. Set aside.

Halve the cherry tomatoes and pop them in a seperate large bowl. Halve the flat peaches and scoop out the stones. Slice the peaches into thick chunks. Halve the chilli, scraping out the seeds and pith if you prefer less heat. Finely chop the chilli. Add the flat peaches and chilli to the bowl.

Peel the garlic and grate it into the bowl with the peaches and tomatoes. Add a pinch or two of oregano. Tear over the basil leaves. Crumble the feta into the bowl. Grate in the lemon zest and squeeze in the juice. Pour in 1 tbsp olive oil and add a pinch of salt and pepper.

Fold your chosen grain in to the salad bowl. Divide between a couple plates and serve,
