Ingredients
- 400g organic chicken mince
- 40g shiitake mushroom soaked and chopped
- 2 garlic, crushed
- 1 thumb ginger, grated
- 4 shallots, finely sliced
- 1 carrot, diced
- 4 stems coriander, finely chopped and leaves set aside
- 1 teaspoon dried coriander
- ½ teaspoon cumin
- 2 teaspoons white sesame seeds
- 1 teaspoon black sesame seeds
- 2 tablespoons tamari
- 1 tablespoon maple syrup
- 2 tablespoons coconut oil
- coriander leaves to garnish
- scliced spring onions to garnish
- cos lettuce cups to serve
Method
In a fry pan, heat half the coconut oil over medium heat and sauté shallots, garlic, ginger, carrot, coriander stems and shiitake mushrooms and cook for 2-3 minutes. Remove from pan. Add remaining coconut oil and fry chicken mince in batches for 5-7 minutes until golden. Add garlic mixture back into pan with chicken and all remaining ingredients and stir-fry for four minutes. Serve mixture in firm lettuce cups.
