Make With Verve: Bruschetta

Walking around a farmers’ market and being able to talk face-to-face with the growers and producers is inspiring, their passion for what they do is infectious and you can taste it in what they are selling.


These toppings were created using fresh, seasonal, local ingredients from the Tauranga Farmers’ Market for a cooking demonstration we did for the Tauranga Garden and Arts Festival. There is a sense of familiarity for us when we are able to do events closer to home and it was one of the most relaxed and enjoyable demos we have been to. When thinking of ways to use the ingredients we had collected from the market, the only way we could do justice to such wonderfully nurtured ingredients was to treat them simply and serve them on freshly baked baguette.


Pea and Mint


  • Farmers’ market baguettes
  • 1 cup baby peas
  • 2 Tbsp olive oil
  • 1 Tbsp white wine vinegar
  • handful mint leaves
  • zest 1 lemon
  • salt and pepper


Place all ingredients into a small food processor and pulse a few times till just combined. Leave the peas with some texture and serve on slices of baguette. Serves 4


Cherry Tomato & Whipped Feta


  • Farmers’ market baguettes
  • 150gm feta
  • 50gm cream cheese
  • 1 small garlic clove chopped
  • ¼ cup olive oil
  • 1 cup cherry tomatoes, quartered
  • salt and pepper


Place all of the ingredients except the tomatoes into a food processor and blend until smooth. Spread whipped feta onto slices of baguette, top with tomatoes and season with salt and pepper. Garnish with micro greens. Serves 4

Smoked Kahawai Spread


  • Farmers’ market baguettes
  • 1 cup smoked kahawai, meat picked and checked for bones
  • 2 tbsp. mayo
  • 2 Tbsp cream cheese
  • few drops tabasco to taste
  • juice half lemon
  • salt and black pepper
  • capers to serve


Place all ingredients in a food processor and process until well combined. Spread onto bruschetta and top with capers to serve. Serves 4
